Over the past few years, the role offood and wine in tourism has changed profoundly from the perspective of tourist behavior. Although it is a relatively recent proposition compared to traditional tourism segments such as beach, mountain and cultural, the food and wine tourism has been growing in strength and articulation, attracting increasing numbers of interested parties. The chapter outlines the profile of the Italian food and wine tourist and the elements that concur in the decisinal process of the travel destination: It also goes on to investigate what Italians prefer when traveling in terms of food and wine and what instead turn out to be the desired experiences that go to constitute sgments of potential supply for the market.
